Ingredients
3-4 medium beetroots, peeled and chopped into wedges
1/2 cup walnuts, toasted
100g feta cheese, crumbled

1 tbsp olive oil (for roasting beets)
1-2 tbsp balsamic vinegar
1 tbsp honey or maple syrup (optional for dressing)
2 tbsp extra virgin olive oil (for dressing)
1 tsp Dijon mustard
Sea salt and freshly ground black pepper, to taste
Fresh herbs (e.g., parsley or mint), chopped (optional)
Method
Roast the Beetroots:
Preheat the oven to 200°C (400°F).
Place the beetroot wedges on a baking tray, drizzle with 1 tbsp olive oil, and season with salt and pepper.
Roast for 30-40 minutes, or until tender and slightly caramelised. Remove and let cool slightly.
Toast the Walnuts:
While the beetroots are roasting, toast the walnuts in a dry skillet over medium heat for about 3-4 minutes, stirring frequently until fragrant and lightly browned. Set aside to cool.
Prepare the Dressing:
In a small bowl, whisk together balsamic vinegar, honey or maple syrup (if using), Dijon mustard, extra virgin olive oil, and a pinch of salt and pepper.
Assemble the Salad:
