Mediterranean Chicken Salad

Mediterranean chicken salad with chicken, tomatoes, peppers and dressing

This Mediterranean-style marinated chicken salad bowl makes a complete evening meal. It combines vibrant flavors and nutritious ingredients, featuring tender and juicy chicken thigh fillets. Inspired by the Mediterranean diet, this recipe embodies a healthy lifestyle by pairing marinated chicken with fresh vegetables and wholesome grains. Enjoy a meal that satisfies your taste buds and supports your overall well-being.


Serves 4


For the chicken

500g chicken thigh fillets

4 cloves garlic, grated

The zest and juice of a lemon

3 tbsp Greek yogurt

3 tbsp olive oil, plus extra for drizzling

2 tsp dried oregano

Salt and pepper


For the dressing

2 tomatoes, grated

2 tbsp olive oil

1 tbsp red wine vinegar

For the salad

1 x 400g tin chickpeas drained

200g cherry tomatoes, halved

½ cucumber, cut into little pieces

50g pitted black olives

80g feta, crumbled

A handful of roughly chopped mint leaves

Pickled onions to serve


For the yogurt

400g Greek yogurt

1 clove garlic, crushed

A handful of finely chopped mint leaves

Salt


Method

Add the chicken, garlic, lemon zest and juice, yogurt, 1 tosp olive oil, oregano and a good pinch of salt and pepper into a mixing bowl and mix well.


 Leave to marinade for 30 minutes or overnight in the fridge.


Using the remainder of the oil, cook the marinated chicken thighs over a medium heat in a frying pan or griddle pan for 3-4 mins per side until golden.


Finish off the cooking on a baking sheet in a oven pre-heated to 180 Deg C fan until cooked through- about 8 to 10 mins.


Whisk all the ingredients for the dressing together in a large bowl. Add the salad ingredients and toss together.


Finally, mix the yogurt, garlic, mint and pinch of salt together in a bowl.


To serve, swirl the yogurt onto 4 serving plates. Top with salad, chicken and pickled onions. Add a little torn fresh mint if you have any in your garden and drizzle over a little extra virgin olive oil.
