Fresh and Flavourful Chicken Lettuce Tacos

Savour the flavours of summer with these vibrant chicken lettuce tacos, featuring seasonal ingredients and a refreshing twist on traditional tacos. Perfect for warm-weather dining, these tacos use crisp Romaine lettuce leaves as a light and crunchy base, making them an ideal low-carb, gluten-free option.

 

Juicy chicken breasts are marinated in zesty lime juice and fajita seasoning, then cooked to perfection. Each taco is topped with a creamy avocado dip and a tangy sour cream drizzle, offering a burst of summer freshness in every bite. Cherry tomatoes and shredded red cabbage add a pop of colour and crunch, creating a delicious and nutritious meal that's as visually appealing as it is tasty.

Ingredients

For the chicken

4 chicken breasts finely sliced

40g fajita seasoning

Lime juiced

2tsp olive oil


For the tacos

2-3 heads romaine lettuce

400g cherry tomatoes

Halved red cabbage, shredded

For the avocado drizzle

2 large avocados pitted

Bunch fresh coriander chopped

2 limes, juiced

1 green chilli, seeds removed

2 tbsp red onion


For the sour cream dip

2 cloves garlic, finely chopped

150g sour cream

1 tbsp olive oil

3 tbsp fresh coriander, finely chopped

Pinch of cayenne pepper


Method

To make the chicken, whisk the lime juice, oil and fajita seasoning in a bowl, add the chicken and combine. Fry over a medium heat until cooked. Set aside to cool.


For the avocado dip, put all the ingredients along with 2tbsp water into a food processor and blend until smooth and creamy.


For the sour cream drizzle, mix the garlic, sour cream, olive oil, coriander and cayenne pepper together.


Season to taste. Separate the leaves from the Romaine lettuce and set them on a serving dish.


Fill each with a spoonful of chicken, cherry tomatoes, shredded cabbage, and a drizzle of avocado dip and sour cream.
